Mamak rojak and otak-otak

At one of the catering sessions, my customer orders mamak rojak as one of the menus (photo). How about otak-otak? The dish is called Malay fish mousse - fresh fish fillets are blended with light spices, coconut milk, kaffir lime leaves and other aromatic herbs, into a sort of fish mousse. The fish mousse is wrapped in banana leaves and steamed or grilled. It makes an exotic appetizer for BBQ party, as my customers always request for it!

In catering business, there are many dishes that we can prepare. We can cook Malay dishes, of course, Chinese cuisine, Indian foods as well as Western. As a Malay, definitely my chef didn’t have any problem in preparing Malay foods. But how she learns to cook others cuisine? That’s our secret.

But to be honest, I and my chef always willing to try new things in cooking, even for Malay foods. That’s why, praise be to God, Lusiana Catering’s dishes always been praised by our clients, including foreigners.

Want to know what is our clients’ favourite? Among others are laksa johor, sweet and sour fish fillet, chicken rendang (Malay spiced with coconut), beef and mutton rendang, Singapore noodle, ayam masak merah (red-cooked chicken), fried kuew tiew and
